French Spinach has a mild, less bitter/salty taste than its full-grown counterpart. Tastes more like collard greens when cooked. When cooked the taste becomes more mild.

French Spinach makes an eye-catching statement on any dish. The ruby-colored leaves can be used raw in salads or as a garnish on fish, beef, or chicken dishes as seen in many high-end restaurants. Add a few for texture on top of the whipped cream on your next slice of pie. For a nutritional boost add them to smoothies, juices, or your omelet in the morning.

STORAGE
To help your shoots get their longest shelf life, store your microgreens in a dry, cool place. Wash them just before eating. Storing them in a resealable bag or container with a lid works well. Add a paper towel if needed to remove water. Do not store them wet. Your microgreens should store for 7-14 days in the refrigerator. Many find these greens stay fresh for up to 30 days!
